There Ernest Ruoss — the master butcher who started it all, a Metzgermeister, one of Germany's most demanding and respected trades — crafted sausages and cured meats by hand, with the discipline only a master is allowed to keep.
That respect for meat — knowing where it comes from, treating it as a craft and not a commodity — crossed an ocean and took root here in Panama. Today it lives on in every cut we raise grass-fed on our pastures, and in every sausage we still make in his tradition.
